Gur (ਗੁੜ), pronounced gurr, is jaggery: the golden to dark brown sweet that Punjab makes by boiling fresh sugarcane juice until it thickens and sets into solid blocks. Before refined sugar reached every village shop, gur was the everyday sweetness of the Punjabi home, and on winter evenings it still is.

## What does gur mean in Punjabi?

Gur is the Punjabi word for jaggery, a traditional non-centrifugal cane sugar: the whole juice is boiled down and set, so the molasses is never separated from the crystals. The Punjabi name comes from the Sanskrit word guda, meaning a ball, which suits the rounded lumps gur is often moulded into. In English it is called jaggery, and across South Asia the same sweet carries many local names.

## How is gur made?

In the cane season, cut sugarcane is crushed and the juice is collected in a large vessel. The juice is boiled in a big, shallow pan over a furnace, traditionally fired with the dried pulp left from crushing. As it boils, the froth and particles that rise to the top are skimmed off, and the liquid slowly thickens to about a third of its first volume. When it turns golden and forms threads as it falls from the ladle, it is poured out to cool, then set and moulded into blocks or lumps.

## How is gur eaten in Punjab?

Punjab eats gur in simple, warming ways. In village homes a piece is taken after a meal, handed to a guest, or given to someone coming in from work in the fields. It sweetens winter tea as gur wali chah, cooks into gur de chawal, the traditional Punjabi dish of rice made with jaggery, and sits beside hot roti with ghee as a plain village treat. In many homes it is also the sweetener worked into choori and pinni.

## Is gur the same as shakkar?

No. Gur and shakkar start from the same sugarcane juice, but they finish in different forms. Gur is set solid, in blocks, balls or lumps that you break with your hands. Shakkar is the loose, powdery form of the same sweetness, easy to spoon into tea or dough. In Punjabi kitchens the two sit side by side, and many families keep both through the winter.
