Kulcha (ਕੁਲਚਾ) is a leavened flatbread from Punjab: soft refined flour dough rolled around a spiced filling, then baked against the hot inner wall of a clay tandoor. The Amritsari kulcha, stuffed with potato or paneer and brushed with butter, is the most famous version.

## What does kulcha mean in Punjabi?

Kulcha is the name of the bread itself, not of a full dish. Unlike the everyday roti, which is unleavened and cooked on a flat tawa, a kulcha starts as a fermented dough, which is why it puffs and stays soft inside. It also differs from naan: naan is usually served plain or with a topping, while a kulcha is built around its filling and its flaky, layered crumb. Plain kulchas exist, but in Punjab the word almost always means the stuffed, tandoor baked bread.

The bread's roots reach back to the Mughal period, when leavened breads filled with spices were made in courtly kitchens with Persian techniques. Amritsar's cooks took that bread and made it heartier and unmistakably Punjabi: fermented dough, a robust filling of spiced potato or paneer, and a fierce tandoor bake. During the 20th century the city's dhabas and street stalls turned it into a morning ritual for traders, travellers and pilgrims alike.

## How is an Amritsari kulcha made?

The baker kneads a soft dough of refined flour and leaves it to ferment, then rolls a portion around a ball of filling: mashed potato with onion, green chilli and spices, or crumbled paneer, or grated cauliflower in winter. The filled disc is rolled flat, sometimes layered with butter for flakiness, and slapped onto the tandoor wall. A minute or two of fierce heat gives a crisp, blistered outside and a soft, steaming middle, and the kulcha comes off the oven to be brushed with butter and served at once with chole, a tangy chutney and pickled onions.

## Why is Amritsar so famous for kulcha?

Because the city made the bread its own and then guarded the craft. Some Amritsar establishments have served kulchas for decades, and the bread is now tied to the city's food identity as firmly as its shrines are to its spiritual one. Punjab's government has applied for a Geographical Indication tag for the Amritsari kulcha, a legal mark linking the name to the place, so that breads sold under that name elsewhere still have to meet the traditional method.
