Phirni names the pudding itself: ground rice, milk and sugar cooked together and then set. Unlike a cake or a halwa, it is spooned, never sliced. In Punjab it appears at weddings, at festivals, and at the end of a dhaba meal, always served chilled rather than warm, in the small clay bowl it was set in. The rice is soaked first, then ground to a paste, and stirred into boiling milk. Sugar, cardamom and saffron go in as the mixture thickens, and sliced almonds and pistachios finish it. The Amritsari badam phirni method mixes the rice paste with a little cold milk before it meets the hot milk, so no lumps form, then chills the set bowls for one to two hours. ## How is phirni different from kheer? Both are milk and rice puddings, and one step makes the difference. In kheer the rice stays whole and cooks as grains in the milk, so kheer pours and can be eaten hot or cold. In phirni the rice is ground before it meets the milk, so the pudding sets firm and smooth, and it is always eaten chilled. ## Why is phirni served in earthen bowls? The shallow clay bowl is part of the dish, not just its plate. Earthenware draws out a little extra moisture while the pudding chills, which helps phirni set thicker, and it lends a gentle earthy aroma that cooks treat as part of the flavour.
