Meaning

A pakora (plural pakore) is a fritter: pieces of vegetable — or sometimes paneer or bread — coated in a seasoned batter of besan (chickpea flour) and deep-fried until crisp and golden. The word covers a whole family of fritters, from lacy onion pakoras to thick slices of potato or cauliflower in their crunchy jackets.

What it is

The batter is the soul of the pakora: besan whisked with water, salt, turmeric, red chilli, cumin and ajwain (carom seeds), sometimes with a little rice flour for extra crunch. Sliced onions, potatoes, cauliflower florets, spinach leaves, green chillies or cubes of paneer are folded through it and dropped by hand into hot oil, where they puff and crisp within minutes.

Pakoras are served straight from the kadhai, dusted with chaat masala, alongside green coriander-mint chutney. Bread pakora — a sandwich of spiced potato filling dipped in besan batter and fried — is a meal in itself. And pakoras folded into a simmering yogurt curry become kadhi-pakora, one of Punjab’s great comfort dishes.

The unbreakable rule: pakoras wait for no one. They are at their best in the five minutes after frying, which is why they are a home and street food rather than a banquet dish.

Cultural context

In Punjab, the first monsoon rain has a smell, a sound — and a snack. “Meeh pai gaya, pakore banao” (it’s raining, make pakoras) is practically a proverb. The combination of hot, crisp pakoras and steaming chai while rain drums on the roof is one of the small, perfect pleasures of Punjabi life, celebrated in songs and films.

Pakoras are also the cook’s answer to surprise guests: the batter takes minutes, the vegetables are whatever is in the kitchen, and a plate of pakoras with chai turns an unannounced visit into hospitality.

ਪਕੌੜਿਆਂ ਨੂੰ ਹਰੀ ਚਟਣੀ ਨਾਲ ਪਰੋਸਿਆ ਜਾਂਦਾ ਹੈ। ਕੜ੍ਹੀ ਵਿੱਚ ਪਕੌੜੇ ਪਾ ਕੇ ਕੜ੍ਹੀ-ਪਕੌੜਾ ਵੀ ਬਣਾਇਆ ਜਾਂਦਾ ਹੈ।
