Meaning
Achar is the Punjabi (and North Indian) word for pickle: vegetables or fruit preserved in oil, salt and spices until they turn tangy, fiery and deeply flavoured. A meal without achar, Punjabis say, feels incomplete — it is the small, sharp accent that wakes up dal, roti and parathas.
What it is
The classic Punjabi achar is built on mustard oil. Raw mango pieces, lemon, green chillies or stuffed red chillies are mixed with salt, crushed mustard seeds (rai), fennel (saunf), nigella (kalonji), fenugreek and red chilli powder, then covered in pungent mustard oil and left to mature in ceramic jars (martbaan) set out in the sun. The sun does slow, essential work: it mellows the oil’s sharpness and deepens the flavours over days and weeks.
Pickle-making follows the calendar. May and June, when raw mangoes arrive, are mango-achar season — the year’s biggest pickle production in most households. Winter brings the quick, fresh pickle of gajar-gobhi-shalgam (carrots, cauliflower, turnips), made in smaller batches and eaten within weeks.
Every family guards its own recipe: the exact grind of the spices, whether the mango is cut with or without the seed, how much oil covers the top. Achar recipes pass from mother to daughter like heirlooms.
Cultural context
Putting up achar is a household event. Mangoes are bought by the crate, the courtyard fills with the smell of mustard oil and ground spices, and neighbours compare notes on whose pickle turned out best. A jar of homemade achar sent with a child going abroad is a taste of home that survives the journey better than almost anything else.
Achar also appears in Punjabi speech as a metaphor for something made sharp or tangy — but at the table its role is literal and honoured: a spoonful on the side of the plate, non-negotiable.
