Jalebi is the beloved coil-shaped sweet of Punjab — fermented batter fried crisp and soaked in saffron syrup, best eaten hot with milk or rabri.
Meaning
Jalebi is one of North India’s most recognisable sweets: bright orange coils of fried batter, crisp on the outside and soaked through with sugar syrup. The name comes from the Arabic zalabiya, pointing to the sweet’s old roots — but in Punjab it has been fully adopted as a local celebration sweet.
What it is
A batter of refined flour (maida) is fermented — traditionally with a little curd left overnight — until it turns slightly tangy. The halwai pipes it in continuous spirals straight into hot ghee or oil, where it fries to a deep golden crisp. The hot coils are then plunged into warm sugar syrup flavoured with saffron and cardamom, soaking up sweetness in seconds.
Jalebi must be eaten hot and fresh; within an hour it loses its snap. The classic Punjabi way is with a glass of warm milk or a bowl of rabri (thickened sweet milk) — the combination of crisp, syrupy coils and cool, creamy milk is one of the great pairings of the cuisine.
Its thicker cousin, imarti (also called amriti), is made from urad dal batter in flower-like shapes rather than coils. The two are often sold side by side, and Punjabis have firm opinions about which is better.
Cultural context
Jalebi is the sweet of mornings and festivals. In Punjabi towns, halwai shops fry it fresh at dawn, and a paper cone of hot jalebis is a standard offering when guests arrive unexpectedly. On festival days — Diwali, Dussehra, weddings — jalebi appears by the kilo.
For the diaspora, jalebi is nostalgia you can smell: the scent of a sweet shop frying a fresh batch is one of the first things Punjabis abroad say they miss, and one of the first things they seek out on a trip home.
