Halwai (ਹਲਵਾਈ) is the Punjabi word for a confectioner: the maker and seller of sweets. The halwai is the person behind the mithai shop counter, frying jalebis in a wide karahi, rolling laddoos and weighing out pinnis, and no wedding or festival order in Punjab is placed without him.
What does halwai mean in Punjabi?
Halwai means confectioner, sweetmeat seller: one who makes and sells sweetmeat, in Rekhta Dictionary's spread of meanings. Rekhta also notes that the word names the sweet maker and seller community, and Wikipedia describes Halwai as a community whose traditional occupation was confectionery and sweet making, found across India, Pakistan, Bangladesh and Nepal, with Punjabi among its languages.
Where does the word halwai come from?
Halwai is named after halwa, the sweet at the heart of the trade. Wikipedia says the community's name is derived from the word halwa, a sweet dish, and Rekhta defines halwa itself as a kind of confection generally made of flour, sugar and nuts. Put plainly, the halwai is the halwa man, and by extension the maker of every sweet in his shop.
What does a halwai make?
A Punjab halwai's counter covers the whole sweet map: syrup soaked jalebi, laddoo, pinni made for winter and for new mothers, barfi, and halwa itself. Rekhta even keeps the breakfast pair halwa puri as a phrase of the halwai's shop: suji halwa with puris, generally made at a halwai shop and eaten at breakfast. For a big wedding order the halwai may be called to the house days ahead, to make the sweets fresh on the spot.
How is a halwai different from a cook?
A halwai is a sweet specialist. A cook makes the savoury meal, but the halwai's craft is sugar, syrup, ghee and milk sweets, judged by eye and hand at the karahi. That is why the word also became a family and community name: like darzi the tailor and kumhar the potter on the occupations page, the trade named the people who practised it.
