Meaning

Pinni (plural pinnian) is a traditional Punjabi sweet made for the cold months. The name refers to the round laddus themselves — dense, fudgy balls of roasted flour, ghee and sweetener, studded with nuts. It is sometimes confused with panjiri, but the two are different: pinni is shaped into balls, while panjiri is a loose, crumbly mixture eaten by the spoonful.

What it is

Whole wheat flour is roasted slowly in desi ghee, stirred patiently until it turns golden and gives off a deep, nutty aroma. This roasting — bhunna — is the heart of the sweet; rushed flour tastes raw, properly roasted flour tastes like winter itself. Into the warm flour go jaggery or sugar, khoya (reduced milk), and chopped almonds, pistachios and cardamom.

While the mixture is still warm it is pressed into round laddus by hand. Pinni keeps for weeks without refrigeration, which is why it was traditionally made in large batches — enough to last through the cold season and to send in tins to relatives.

It is energy-dense food by design: ghee, jaggery and nuts in every bite. In the old days, when winters were harsher and work was physical, a pinni with morning milk was breakfast enough for a farmer heading to the fields.

Cultural context

Pinni has a special role after childbirth. New mothers (jappa) are fed pinnis for weeks because the sweet is considered warming and strength-giving — ghee for nourishment, jaggery for iron, nuts for richness. A daughter’s mother will often arrive with a dabba of homemade pinnis, and no shop-bought box quite matches it.

Making pinni is also a family production: flour roasted in a vast kadhai, everyone taking turns at the stirring, the whole house smelling of ghee and cardamom. For Punjabis abroad, a parcel of pinnis from home is one of the most welcome things that can arrive in the post.

ਪਿੰਨੀ ਕਣਕ ਦੇ ਆਟੇ ਨੂੰ ਦੇਸੀ ਘਿਓ ਵਿੱਚ ਭੁੰਨ ਕੇ ਬਣਾਈ ਜਾਣ ਵਾਲੀ ਮਿਠਾਈ ਹੈ। ਭੁੰਨੇ ਹੋਏ ਆਟੇ ਵਿੱਚ ਗੁੜ ਜਾਂ ਖੰਡ, ਖੋਆ ਅਤੇ ਮੇਵੇ ਮਿਲਾ ਕੇ ਗੋਲ ਲੱਡੂ ਬਣਾਏ ਜਾਂਦੇ ਹਨ।

ਪਿੰਨੀ ਸਰਦੀਆਂ ਵਿੱਚ ਬਣਾਈ ਜਾਂਦੀ ਹੈ ਕਿਉਂਕਿ ਇਹ ਸਰੀਰ ਨੂੰ ਗਰਮੀ ਅਤੇ ਤਾਕਤ ਦਿੰਦੀ ਹੈ। ਜੱਚਾ ਔਰਤਾਂ ਨੂੰ ਤਾਕਤ ਲਈ ਪਿੰਨੀਆਂ ਖਵਾਈਆਂ ਜਾਂਦੀਆਂ ਹਨ।

ਪਿੰਨੀਆਂ ਹਫ਼ਤਿਆਂ ਤੱਕ ਖਰਾਬ ਨਹੀਂ ਹੁੰਦੀਆਂ, ਇਸ ਲਈ ਇਹਨਾਂ ਨੂੰ ਡੱਬਿਆਂ ਵਿੱਚ ਰੱਖ ਕੇ ਰਿਸ਼ਤੇਦਾਰਾਂ ਨੂੰ ਵੀ ਭੇਜਿਆ ਜਾਂਦਾ ਹੈ।
