Meaning
Panjiri is a traditional Punjabi sweet mixture made from roasted wheat flour. It is often mentioned alongside pinni, but the two are distinct: pinni is pressed into round laddus, while panjiri is left loose and crumbly, eaten by the spoonful straight from the jar.
What it is
Wheat flour is roasted slowly in desi ghee until golden and fragrant. Into it go sugar, fried gond (edible gum, which puffs up like popcorn in hot ghee), chopped almonds and pistachios, melon seeds, dried coconut and cardamom. Some families add a little semolina for texture. The result is a rich, granular mixture that keeps for weeks in an airtight container.
Gond is what sets panjiri apart. In Ayurvedic and folk tradition it is considered warming and strengthening, which is why panjiri is classified as winter food — something to be eaten in small daily portions through the cold months rather than as a dessert after meals.
Panjiri is also made as prasad in some households, particularly around Janmashtami, where a drier, simpler version is offered and distributed.
Cultural context
Like pinni, panjiri’s most honoured role is postpartum. For forty days after childbirth, a new mother is given panjiri daily — the ghee and gond for strength, the nuts for nourishment, the sugar for energy. Halwais across Punjab sell panjiri year-round, but the homemade kind, made by a mother or mother-in-law, carries an emotional weight no shop version can match.
In winter, a spoonful of panjiri with warm milk is a common household prescription for growing children and elders alike — Punjabi grandmothers have recommended it for generations, long before anyone spoke of “superfoods.”
