Meaning

A samosa is a deep-fried pastry parcel, triangular in shape, filled with a savoury stuffing. The word and the snack are believed to have travelled to India centuries ago from the Middle East and Central Asia, where versions called sambusa or samsa are still eaten — but in Punjab the samosa has been so thoroughly adopted that it feels entirely native.

What it is

The classic Punjabi samosa starts with a stiff dough of refined flour (maida), rolled thin and folded into a cone around a filling of mashed potatoes and peas seasoned with cumin, coriander, turmeric, green chillies and tangy amchur (dried mango powder). Sealed into its famous triangle, it is deep-fried until the pastry turns golden, blistered and shatteringly crisp.

It is served hot, almost always with chutneys — sweet-sour imli (tamarind) and fiery green coriander-mint. Variations abound: keema (minced meat) samosas, sweet samosas filled with khoya, cocktail-sized mini samosas for parties, and the beloved chole-samosa chaat, where a samosa is crushed under chickpea curry, onions and chutneys.

The test of a good samosa is the pastry: it should be crisp and flaky, never soggy or oily, with a filling that is well-spiced but not mushy.

Cultural context

In Punjab, samosa and chai are a ritual pairing — the answer to unexpected guests, rainy afternoons, and the 4 o’clock hunger that strikes offices and colleges alike. Halwai shops keep trays of them warming through the day, and no market visit is complete without “do samose” from the favourite shop.

Abroad, the samosa has become one of India’s most recognised food ambassadors, found in supermarkets and food trucks far from Punjab. Yet Punjabis will insist that a samosa eaten anywhere else is an approximation — the real one comes wrapped in newspaper from a shop whose recipe hasn’t changed in decades.

ਸਮੋਸੇ ਨੂੰ ਇਮਲੀ ਦੀ ਚਟਣੀ ਨਾਲ ਖਾਧਾ ਜਾਂਦਾ ਹੈ। ਛੋਲੇ-ਸਮੋਸੇ ਦੀ ਚਾਟ ਵੀ ਬਹੁਤ ਮਸ਼ਹੂਰ ਹੈ।
