Meaning

Lassi is the Punjabi name for a drink made by churning set curd (dahi) until it turns smooth and drinkable. The word is used across North India now, but the drink’s spiritual home is Punjab, where a glass of lassi is less a beverage and more a small institution.

What it is

Thick curd is churned — once with a wooden madhani, today often with a blender — and thinned just enough to pour. The classic Punjabi lassi comes in two forms: sweet (mithi), whisked with sugar, and salted (namkeen), seasoned with salt and sometimes roasted cumin. Mango lassi, blended with ripe mango pulp, is the celebrated summer variation.

It is served chilled in a tall glass or an earthen kulhad, and the mark of a proper lassi is the thick layer of malai — the cream that rises on boiled milk — floating on top, sometimes a finger thick. In Amritsar’s old bazaars, shops serve a legendary version with a piece of peda (milk sweet) dissolved into it, eaten as much as drunk.

Lassi is food as well as drink: a large glass can stand in for breakfast. It cools the body in summer, settles the stomach, and is considered wholesome, honest nourishment — the opposite of a fizzy, factory-made soft drink.

Cultural context

In rural Punjab the day still begins, in many homes, with lassi churned from the morning’s milk. Offering a guest a glass of lassi is the Punjabi shorthand for welcome; refusing it takes some insistence. The drink appears in folk songs, in jokes about Punjabi appetites, and in the memories of every Punjabi who grew up watching cream being skimmed off the morning milk.

Abroad, lassi has become one of Punjab’s most successful culinary exports — mango lassi is now a fixture on restaurant menus from Toronto to Sydney. Yet Punjabis will tell you the real thing needs the malai an inch thick and the glass too big to finish easily.
