Meaning
Sabzi means both vegetables in general and the cooked vegetable dish served with a meal. When a Punjabi asks “ajj sabzi ki bani hai?” — “what vegetable is made today?” — they are asking what the main dish of the meal is. The word carries the weight of the everyday: sabzi is what dinner is.
What it is
A sabzi is vegetables cooked with a simple masala — typically onion, tomato, ginger, garlic, turmeric, cumin and coriander — in mustard oil or ghee. It can be sukhi (dry), like aloo-gobhi or bhindi, or tari wali (with gravy), like a shahi paneer-style preparation or a thin seasonal curry meant to be scooped with roti.
The Punjabi sabzi follows the seasons because the vegetables do. Winter brings gobhi-gajar-shalgam (cauliflower, carrots, turnips), bathua and sarson; summer brings bhindi (okra), tinda, karela and ghiya. Eating with the season is not a philosophy here — it is simply how the kitchen has always worked, because that is what the fields and markets offer.
