Meaning

The name breaks into three parts. Sarson is the mustard plant, da means “of,” and saag is the Punjabi word for a dish of slow-cooked leafy greens. Put together, sarson da saag means “the greens dish made of mustard.” While saag can be made from other leaves, in Punjab the word said on its own almost always means the mustard version.

Mustard is a winter crop in Punjab, sown after the monsoon and harvested in the cold months. That is why sarson da saag belongs to winter: it is made when the leaves are young, tender and at their most flavourful.

What it is

The leaves are washed, chopped and pounded, then simmered for hours on a low flame, often with bathua (goosefoot) and a little spinach mixed in. The long cooking breaks the leaves down completely, and they are then mashed — traditionally with a wooden masher called a ghotna — into a thick, coarse, deep-green puree.

The seasoning is simple: salt, ginger, garlic and green chillies. What lifts the dish is the finish — a generous spoon of desi ghee or a dollop of white butter (makkhan) melting into the hot saag. It is served with makki di roti, the maize flatbread, alongside a piece of jaggery (gur) and slices of raw onion. A glass of lassi often completes the meal.

Good saag is never hurried. The slow simmer is what removes the raw sharpness of the mustard leaves and gives the dish its mellow, earthy depth. In village homes it is still made in large quantities, enough for the family and for neighbours who drop by.

Cultural context

Sarson da saag with makki di roti is the emblem of Punjabi food — the dish Punjabis abroad miss most and the one every dhaba along the Grand Trunk Road serves with pride. It has been celebrated in songs and films for generations, and it is the centrepiece of winter gatherings, Lohri feasts and farmhouse meals.

For the Punjabi diaspora, cooking saag in a foreign kitchen — sometimes with tinned or frozen greens when fresh mustard leaves are hard to find — is a small act of carrying Punjab along. The dish connects the winter fields of home to dining tables in Toronto, London and California.
