Makki di roti is the maize-flour flatbread of Punjab, patted out by hand and cooked on a hot griddle. It is the inseparable partner of sarson da saag.

Meaning

Makki is maize (corn), di means “of,” and roti is the unleavened flatbread eaten across North India. Makki di roti is therefore simply “maize flatbread” — but in Punjab the name carries the whole winter table with it, because this roti is rarely spoken of without sarson da saag beside it.

What it is

The roti is made from finely ground maize flour. Because maize has no gluten, the dough will not stretch the way wheat dough does. It is kneaded with hot water into a soft dough and then patted out by hand — thapna, the rhythmic clapping of the dough between the palms — into a thick round. Rolling pins are of little use here; the hand does the work.

It cooks on a hot tawa (griddle), flipped until both sides are flecked with brown spots, and is finished with a generous smear of desi ghee or white butter while still steaming. The edges may crack a little; that is normal and expected. It is eaten hot, torn by hand and used to scoop up saag.

Maize is a hardy, filling grain, and the roti made from it is dense and warming — food for cold mornings and for people who work in the fields. Besides saag, it is also eaten with white butter and jaggery, or with a simple dal.

Cultural context

Makki di roti belongs to the Punjabi winter the way mangoes belong to its summer. In villages it is still the everyday bread of the cold months, made fresh for each meal because it stiffens as it cools. Dhaba owners along Punjab’s highways know that a traveller asking for saag expects the roti to be makki — wheat roti will not do.

For Punjabis abroad, learning to thap a makki roti without it breaking is a small rite of passage, usually taught by a mother or grandmother over a video call. The slightly uneven, hand-patted disc is a reminder that some foods cannot be rushed or machine-made.
