Meaning
Murabba is a preserve made by cooking whole or large pieces of fruit in sugar syrup until they turn translucent and saturated with sweetness. The word comes from the Arabic murabba, meaning something squared or prepared — a reminder that the technique travelled to Punjab along old trade and culinary routes.
What it is
The most famous Punjabi murabba is made from amla (Indian gooseberry). The tart, hard fruits are pricked, soaked, and then simmered gently in sugar syrup until they turn amber and glossy. Apple murabba, harar murabba and even carrot murabba are also made, but amla remains the king — partly for its taste, partly because amla is valued in folk tradition as rich in vitamin C and good for health, especially in winter.
Unlike jam, murabba keeps the fruit whole or in large pieces, suspended in syrup in glass jars. A spoonful is eaten as a sweet condiment — with roti, after a meal, or simply on its own. Because sugar is itself a preservative, murabba keeps for months without refrigeration.
Making murabba is slow work: the syrup must be the right thickness, the fruit must cook through without breaking, and patience matters more than skill. In the days before fruit was available year-round, murabba was how a family carried the winter amla harvest into the rest of the year.
Cultural context
Amla murabba occupies a special place as both food and folk medicine — grandmothers prescribe it for colds, for strength, for “seasonal” health, and children are coaxed to eat it with the promise that it will keep them from falling ill. Whether or not one believes every claim, the preserve’s reputation is centuries old.
Jars of homemade murabba, glinting in the winter sun on a kitchen shelf, are a familiar sight in Punjabi homes — and another of those foods that travels well in parcels to children living abroad.
