Meaning

A chulha is the traditional Indian stove: a squat structure of kneaded clay or mud, sometimes reinforced with brick, with openings for firewood and for the cooking pot or griddle to sit over the flame. For generations it was the only stove rural Punjab knew.

What it is

The chulha burns wood, dried dung cakes (gohe or pathian) and crop residue — whatever the farm provides. The fire is slower and gentler than a gas flame, and food cooks at an unhurried pace: dals simmering for hours, rotis puffed directly over the open flame, milk reduced slowly for khoya. The faint smokiness it lends is something Punjabis recognise instantly — “chulhe di roti” tastes different from gas-cooked roti, and everyone who has eaten both knows it.

Cooking on a chulha is skilled work: judging the fire, feeding it steadily, knowing which corner of the griddle runs hottest. The women who mastered it did so over decades, and their hands knew the stove the way a musician knows an instrument.

Even where gas cylinders have arrived, many village homes keep a chulha in the courtyard for slow dishes — saag, dals, large-batch cooking for guests — because some foods simply demand it.

Cultural context

The chulha was never just equipment; it was a social place. The sanjha chulha — the shared hearth — was where neighbourhood women gathered to cook together, kneading dough side by side, sharing news and songs while the rotis puffed. In Punjabi folk memory, the sanjha chulha stands for a time when cooking was communal and no one ate alone.

The chulha also lives on in language: “chulha chaunki” means the kitchen and its work, and to “keep someone’s chulha burning” is to keep their household fed and alive. In a few words of clay and fire, Punjabi carries its whole idea of home.

ਚੁੱਲ੍ਹਾ ਮਿੱਟੀ ਦਾ ਬਣਿਆ ਪਰੰਪਰਾਗਤ ਚੁੱਲ੍ਹਾ ਹੈ ਜਿਸ ਵਿੱਚ ਲੱਕੜਾਂ ਜਾਂ ਗੋਹੇ ਸਾੜ ਕੇ ਅੱਗ ਬਾਲੀ ਜਾਂਦੀ ਹੈ। ਇਸ ਉੱਤੇ ਘੱਟ ਅੱਗ ਵਿੱਚ ਖਾਣਾ ਹੌਲੀ-ਹੌਲੀ ਪੱਕਦਾ ਹੈ।

ਚੁੱਲ੍ਹੇ ਦੀ ਰੋਟੀ ਦਾ ਸਵਾਦ ਗੈਸ ਦੀ ਰੋਟੀ ਨਾਲੋਂ ਵੱਖਰਾ ਹੁੰਦਾ ਹੈ। ਪਿੰਡਾਂ ਵਿੱਚ ਸਾਂਝੇ ਚੁੱਲ੍ਹੇ ਹੁੰਦੇ ਸਨ ਜਿੱਥੇ ਔਰਤਾਂ ਇਕੱਠੀਆਂ ਹੋ ਕੇ ਪਕਾਉਂਦੀਆਂ ਅਤੇ ਗੱਲਾਂ ਕਰਦੀਆਂ ਸਨ।

ਅੱਜ ਵੀ ਕਈ ਪਿੰਡਾਂ ਵਿੱਚ ਚੁੱਲ੍ਹਾ ਵਰਤਿਆ ਜਾਂਦਾ ਹੈ। ਸ਼ਹਿਰਾਂ ਵਿੱਚ ਵੱਸਦੇ ਲੋਕ ਚੁੱਲ੍ਹੇ ਦੇ ਖਾਣੇ ਨੂੰ ਯਾਦ ਕਰਦੇ ਹਨ।
