Dal — lentils simmered soft and finished with a ghee tempering — is the everyday heart of the Punjabi meal, from humble moong dal to celebratory dal makhani.
Meaning
Dal is both the raw ingredient and the cooked dish: the word covers dried lentils, peas and beans, and the savoury preparation made by boiling them soft. In Punjab, “dal-roti” said together means a complete, honest meal — the phrase is shorthand for simple, sufficient food.
What it is
The everyday Punjabi kitchen works with a whole shelf of dals: moong (green gram), masoor (red lentils), arhar or toor, chana (split chickpeas) and urad (black gram), each with its own cooking time and character. They are boiled or pressure-cooked until soft, then finished with a tadka — cumin seeds, garlic, onion and tomato sizzled in ghee or oil and poured over the top with a satisfying hiss.
The most famous Punjabi dal is dal makhani: black urad simmered overnight on a low flame with a little rajma (kidney beans), enriched with butter and cream. Born in the dhabas and restaurants of twentieth-century Punjab and Delhi, it turned a humble lentil into a dish served at weddings.
In gurdwaras, dal takes on another form: the langar dal, cooked in enormous deghs (cauldrons) for hundreds of people, simple, generously salted, and served with rotis to everyone who sits in the pangat regardless of who they are.
Cultural context
For a largely vegetarian region, dal is the protein backbone of the diet — the dish that appears at lunch and dinner, in rich homes and poor ones, differing only in how much ghee goes into the tadka. A Punjabi mother’s dal has a taste no restaurant reproduces, because it is seasoned by habit and memory rather than recipe.
Dal also carries moral weight in Punjabi speech: to eat dal-roti is to live within one’s means, honestly and without show. The dish is humble, but the values attached to it are not.

ਸ਼ਾਕਾਹਾਰੀ ਭੋਜਨ ਵਿੱਚ ਦਾਲ ਪ੍ਰੋਟੀਨ ਦਾ ਮੁੱਖ ਸੋਮਾ ਹੈ। ਦਾਲ-ਰੋਟੀ ਨੂੰ ਸਾਦਾ ਅਤੇ ਸਿਹਤਮੰਦ ਭੋਜਨ ਮੰਨਿਆ ਜਾਂਦਾ ਹੈ।
